Recipe | Healthy Chicken One-Pot


Something a little different today and one for all of you who have sold your dietary soul to the New Year's Resolution Overlords.  It's quick, healthy and most importantly doesn't fall short in the taste department. Here's what you'll need to serve four people:

4 Skinless & Boneless Chicken thighs
2 Large Leeks, chopped
2 Garlic Cloves, crushed
200g Easy Cook Brown Rice
450ml Chicken Stock
1 or 2 Broccoli heads, broken into florets
Sea Salt & Black Pepper

To start with, heat a large lidded frying pan and add some oil. Fry the chicken thighs for 2 minutes, turning halfway through, until lightly coloured and then remove and set aside.

Add the leeks to the pan and fry for 3 minutes, then add the garlic and the rice. Stir together until mixed well. Bury the chicken in the rice mix and pour over the chicken stock. Season lightly (I add chili flakes at this stage but it's optional). Cover and cook on a low heat for around 20 minutes or until the chicken is nearly cooked through and the rice has absorbed the majority of the liquid.

Sit the broccoli on top of the rice, cover and continue to cook until the rice and broccoli are tender and the chicken is cooked. Serve with some cracked pepper.


Et voilà. Sure, its not the prettiest of dishes but it tastes awesome and when you're trying to eat clean it's important not to compromise on flavour. This recipe is packed with flavour, is simple to prepare and practically cooks itself - let me know if you give it a whirl!
